de la Méditerranée ? Ou encore, est-ce tout simplement parce qu’entre
ses murs, tradition et modernité sont indissociables et se conjuguent
harmonieusement ? Pour toutes ces raisons, l’Hôtel Martinez a le regard
résolument tourné vers l’avenir placé sous le signe de l’optimisme et de

daughter of an ocean liner
captain, her childhood was
spent between luxurious
palaces in the united States
and france and transatlantic
crossings. But her world was
definitely the comics of the
60s and Pop art. So, after
some drawing lessons at the
École Charpentier in Paris,
she was discovered in 1986 by
daniel Cordier, a famous art
dealer and, in 1989, her work
was recognized when it was
put on permanent display at
the Centre Pompidou. her
world? She calls it «Pep’art»,
something between a nod
to her idol andy Warhol and
a reference to the vitality of
her paintings. ultra colorful,
accumulating characters and
details, her frescoes are a
never-ending interweaving
of narratives. from tokyo to
the Martinez via hong Kong
or the united States, Karen
travels the globe speaking
one language to all which
is universal to her: art.
C ’est en bonne compagnie, entourée de Gilles
Jacob et de Jude Law, que l’artiste franco-
américaine, Karen, avait dévoilé, lors du 64ème
Festival de Cannes, une toile de trois mètres
de long exposée au Martinez. Fille d’un
commandant de bord de paquebots, elle a partagé son
enfance entre luxueux palaces aux États-Unis et en France
et traversées transatlantiques. Mais son univers, c’était
surtout la bande dessinée des années 60 et le Pop’Art.
Ainsi, après des cours de dessins à l’École Charpentier
à Paris, elle est découverte en 1986 par Daniel Cordier,
célèbre marchand d’art et, dès 1989, elle voit son travail
reconnu avec l’entrée de ses œuvres au Centre Pompidou.
Son univers ? Elle le qualifie de « Pep’Art’ », entre clin
d’œil à son idole Andy Warhol et référence à la vitalité
de ses toiles. Ultra colorées, accumulant les personnages
et les détails, ses fresques entremêlent les narrations à
l’infini. De Tokyo au Martinez en passant par Hong Kong
ou les États-Unis, Karen parcourt le globe parlant à tous
un seul langage, qui, lui, est universel : l’Art.

Maggy Smiss is a dJ from the
electronic music scene who
does shows in her native Paris,
her adopted city of Lyon, and
few forays here and there,
including Cannes. She cannot
live without music and at a
very young age she became
a fan of Michael Jackson and
Jamiroquai before drawing her
inspiration from the electro
funk style. She is well liked for
her electro pop tendencies

qui, d’année en année, n’en finit pas d’étonner
ses hôtes. Non contente de leur offrir des
journées de rêve, entre la Croisette et les
îles de Lérins, elle leur concocte, le soir venu,
un programme musical de haut vol, du 1er juillet au
26 août. Le show promet d’être à la hauteur de la
température extérieure, très chaud ! Jugez plutôt.
Chaque soir (excepté les soirées privatives et feux
d’artifices), DJ Maggy Smiss est aux platines. Maggy
Smiss, c’est cette DJ de la scène électronique qui
se partage aujourd’hui entre Paris, son berceau,
et Lyon, sa ville d’adoption, avec quelques petites
incursions ici et là, dont Cannes. La musique,
elle ne peut pas vivre sans et, très jeune, elle se
passionne pour Michael Jackson, Jamiroquaï, avant
de s’inspirer du style electro funk. On l’apprécie pour
sa tendance électro pop et ses mix éclectiques, pour
ses mélanges pop groovy, rock et disco funky. Avec

Il reprend les titres des meilleurs morceaux internationaux et égrènent les tubes des années passées. Les

C hez elle, en Chine, elle a accédé à la
célébrité dès 1997, après avoir joué Jin
Suo dans une célèbre sitcom, « Huan
Zhu Ge Ge ». « J’appartiens à une famille
d’artistes. Mon père était chanteur et
ma mère danseuse. J’ai intégré une école d’art à
Shangai à quatorze ans et dès l’année suivante, j’ai
passé un casting pour une série télé. En fait, ma vie a
toujours été intimement liée au monde du spectacle
et du divertissement. » Outre ses apparitions sur le
petit écran, la belle chinoise s’invite dans des films :
« reunion » et « Love at first sight » en 2001, « A
chinese tall story » en 2005… Deux ans plus tard, son
nom apparaît à l’affiche de sept longs métrages !
SéduiSante et Sexy
Fan BingBing a-t-elle conscience qu’en un peu
plus d’une décennie, elle a révolutionné l’image
de la femme en Chine ? Autrefois jolie et surtout
bien sage, elle est maintenant séduisante mais
aussi sexy, voire un brin provocatrice. L’actrice s’en
explique : « Je crois qu’en chacun de nous, il y a deux
personnalités différentes. Sont-elles diamétralement
opposées ? Lorsque j’ai dévoilé ma part d’ombre, je
me suis sentie soulagée. Plutôt que de révolution, je
parlerais de conduite. Parce que, finalement, chacun
est responsable de lui-même. » Toujours est-il qu’en
2010, Fan est apparue dans plus de cinquante
spots publicitaires. Et chacune de ses apparitions a
provoqué un mini raz-de-marée. Elle est entrée dans
le « Celebrity Chine 100 », la liste annuelle publiée
par le magazine Forbes dès 2005 et depuis, elle
figure régulièrement dans le top 10, avec une sixième
place en 2008.
Pourtant, Fan BingBing ne se considère pas comme
une femme d’affaires. « J’ai mon propre studio, c’est
vrai, mais c’est par passion et pour pouvoir choisir
ce que je veux faire, pas dans un but commercial. »

photographe. C’est à lui que l’on doit les
superbes portraits du livre « Inside Cannes
The Golden Edition », un ouvrage qui regroupe
les photos en noir et blanc de quelques-unes
des égéries de L’Oréal Paris et fête quinze ans de
partenariat entre l’un des plus célèbres festivals du
monde et une marque emblématique. En quinze ans,
ce ne sont pas moins de 168 égéries qui ont foulé le
red carpet et offert aux photographes leur teint de
porcelaine, leur regard de braise, leurs yeux de biche,
leurs lèvres pulpeuses et gourmandes. 2030 tubes de
mascara ont été nécessaires et pas moins de 196 make
up artists (comprenez des maquilleurs de talent) ont
mis leur savoir-faire au service de la beauté. Avec
ce livre, L’Oréal Paris rend un hommage mérité
au rendez-vous du 7ème art. Deux cent cinquante
pages retracent sa formidable histoire d’amour avec
le Festival et c’est une grande dame qui signe l’édito.
Son nom ? Elle est la fille d’un certain Peter Fonda,
a tourné avec les plus grands et milite pour que les

in the world and an iconic brand. in 15 years there have
been no less than 168 muses who have graced the red
carpet and showed off their porcelain complexions, their
eyes like coals, their doe eyes and their full and glossy
lips to the waiting photographers. this required 2030
bottles of mascara and no less than 196 make-up artists
who used their expertise in the quest for beauty. With
this book, L’oréal Paris pays a well-deserved tribute to
the film festival. its 250 pages tell the brand’s incredible
love story with the festival, with a preface written by
one of the first ladies of film. and who is she? She is the
daughter of a certain Peter fonda, has filmed with the
great and the good of the film world, and campaigns
for women not to feel that they have to have cosmetic

P lébiscité par une clientèle internationale
qui apprécie son environnement autant
que ses prestations, le Martinez est
également reconnu pour ses infrastructures
à vocation « réceptives ». Ainsi offre-t-
il plus de 2500 m2 d’espaces intérieurs modulables,
capables d’accueillir jusqu’à mille personnes. En
extérieur, la terrasse piscine ou la Zplage deviennent,
à la demande, des espaces privatifs parfaits pour des
déjeuners, des cocktails ou des dîners. Forts de ses
atouts et d’un staff très engagé dans la réussite de
l’hôtel, le Martinez a été le théâtre d’un rendez-vous
que l’on gardera longtemps en mémoire, le B20.
une organiSation SanS faiLLe
2 et 3 novembre 2011. Deux journées inoubliables
pour un événement d’envergure mondiale, le
Business 20, plus connu sous le nom de B20. En
marge du G20, cette réunion, qui a rassemblé plus
de cinq cents participants, a nécessité une attention
de tous les instants et, en amont, une préparation
des plus minutieuses. Performance logistique,
mais aussi et surtout humaine ont présidé à la
réussite de la manifestation. Si toutes les équipes
du Martinez étaient partie prenante, huit cents
personnes supplémentaires, sont intervenues à
tous les niveaux, de la base au sommet. Il a fallu
monter d’abord, démonter ensuite, répondre à tous
les besoins techniques et logistiques pendant 48
heures. Le Martinez a mis à la disposition du B20
tous ses salons, quinze au total. Le royal Galuchat
a été aménagé comme un plateau Tv géant, avec
son public : il a fallu y installer un matériel high-
tech, audio, vidéo, retransmission, son et lumière,
y aménager des cabines de traduction simultanée,
indispensables pour permettre à chacun de suivre les
prises de paroles des différents intervenants. Tous les
autres salons de l’établissement ont été également
« réquisitionnés » pour l’occasion. « Ultra équipés »,
ils sont devenus, l’espace de deux jours, des sous-
plénières, hébergeant des groupes de quatre-vingt
à cent personnes réunis pour travailler. rien n’a été
laissé au hasard, et la mise en scène a joué un rôle
essentiel dans la bonne tenue de chaque séance.
Ainsi les intervenants se retrouvaient-ils au centre
du salon, autour de tables disposées en bloc fermé,
alors que le public prenait place sur des chaises
installées tout autour.
un pLateau de choix
Deux jours durant, le Martinez s’est transformé en un
lieu de rencontre privilégié entre des organisations
patronales et plus d’une centaine de PDG des plus
importantes entreprises de la planète. C’est le Medef

november 2nd and 3rd, 2011. two
unforgettable days for a global
event, the Business 20, aka the
B20. not unrelated to the g20
meeting, this meeting brought
together more than five
hundred participants which
required special attention
at all times and, most of all,
very meticulous preparations.
it was not only the logistics,
but especially the level of
service which made the event
a success. not only were all
Martinez staff involved, but
the services of a further 800
people were required at every
level from the top down. it
all had to be set up, then
subsequently taken down,
and all of the logistical and
technical needs had to be met
over a period of 48 hours.
the Martinez made all its 15
meeting rooms available to
the B20 the royal galuchat
was set up like a giant tv
studio with its audience:
high-tech audio, video, and
broadcasting equipment,
sound and lighting, had to be
set up as well as simultaneous
translation booths, necessary
to enable every participant
to follow the presentations
of the various speakers. all
the other meeting rooms
were also «commandeered»
for the occasion. ultra-
equipped, for two days they
became sub-plenary sessions,
hosting groups of eighty
to one hundred persons
gathered to work. nothing
was left to chance and the
organization played a key
role in the smooth running of
each session. So, the speakers
found themselves in the center
of the room around tables
arranged as one block’ while
the audience was seated on
chairs set up all around.
an exceptional Stage
for two days, the Martinez
turned into a special meeting
place between employers’
organizations and more than
a hundred Ceos from some of
the biggest companies in the
world. it was Medef that sent
out the invitations. heads of
state from russia, argentina,
Japan, Mexico, australia and
South africa were present. the
program featured exchanges,
conferences, panel discussions,
topped off by a gala evening
honoured by the presence of
Lee Myung-Bak, President of
South Korea, and Christine
Lagarde, director general of
the iMf. during the span of a
dinner, work gave way to a bit

l’Afrique du Sud avaient répondu présents. Au
programme, des échanges, des conférences, des
tables rondes, le tout ponctué par une soirée de gala
honorée par la présence de Lee Myung-Bak, Président
de la république de la Corée du Sud et de Christine
Lagarde, Directrice Générale du FMI. Le temps d’un
dîner, le travail a laissé la place à la détente : le magicien
avait pour nom Christian Sinicropi et la scène s’est
jouée sur la Zplage. Le chef doublement étoilé avait
imaginé un souper gastronomique d’exception pour
marquer les esprits… et les palais. Là encore, le
professionnalisme de chacun a permis de proposer
un moment unique sous le signe de la haute cuisine
française. Les convives avaient pris place sous une
immense tente aménagée pour l’occasion : jolies
tables et service impeccable au menu. Le petit plus,
qui signe les grandes maisons : tous les plats d’une
même table ont été « déclochés » simultanément ! Un
détail, mais qui prend tout son sens.
un Savoir-faire LogiStique
À l’heure des au revoir, chacun s’accordait à
reconnaître la réussite de ce B20, le professionnalisme
des équipes, leur savoir-faire et leur dévouement. Si
la sécurité a été à son maximum, elle n’a privé en
rien l’aspect humain de cette rencontre, ponctuée
de beaux moments de convivialité. Le Martinez en
est ressorti grandi, et les dirigeants des plus grandes
entreprises de France et d’ailleurs n’ont pas manqué,
dans leurs lettres de remerciements, de saluer la
performance de tous. Une belle récompense pour les
équipes de l’hôtel qui, une fois encore, a prouvé sa
cohésion et son implication de chaque instant dans la
réussite d’un projet commun. Nul doute que ce B20
2011 restera, du côté des organisateurs comme des
participants, un moment d’émotion intense. Pour le
Martinez, il demeure une performance et entre dans
son histoire, celle d’un palace intemporel et unique,
prouvant s’il en était besoin, son savoir-faire en
matière d’organisation d’événements, pas seulement
des événements de strass et de paillettes, mais aussi
de ceux qui réunissent les plus grands décideurs et
businessmen du monde entier.

cinquième album studio très attendu du
quatuor britannique Coldplay, révélé au
grand public douze ans plus tôt avec
le tube planétaire : « Yellow ». Les fans étaient au
rendez-vous, les critiques, quoiqu’enthousiastes,
étaient, elles, plutôt dubitatives après l’immense
succès rencontré par leur précédent opus, « viva la
vida or Death and All His Friends ». Et une fois encore,
le groupe formé par Chris Martin, Johnny Buckland,
Guy Berryman et Will Champion, rencontrés sur
les bancs de la fac à Londres au milieu des années
90, a conquis la planète. Les membres de Coldplay

wendy almira,zplage maître d’Was it because Wendy almira’s
childhood was filled with the
magical land of Peter Pan that
she now has a real passion
for travel? But not for just
any destination. for her, it’s
got to be somewhere where
the sun shines, where people
take their time over things.
a warm and bubbly person,
Wendy is definitely a southern
girl. She lived in guadeloupe
for a long time, but it was the
iberian peninsula that she
came back to. She spent more
than 15 years there, criss-
crossing Spain and the Costa
Blanca before heading off to
the Canaries. her favourite
place where she stayed for 10
years. in 2006 she decided
to move back to france and
it was of course to Cannes
that she came, where the sun
shines 300 days a year and
to the Martinez, where she
was a commis chef, chef de
rang and then maître d’. and
where she is maître d’? no less
than at Zplage right near the
sea and the Lérins islands. a
nice reminder of her island
years. “it can sometimes be
intense but i love it. it’s one
of the most beautiful beaches
in Cannes and the setting is
just idyllic. every year i get a
pang when the season ends
and i really can’t wait until
april to come round again and
for a new chapter to start.”
at Zplage Wendy exudes her
delight in being here. She does
sometimes miss life in Spain,
of course. “i like the way of life
there, the flexible hours, the
warmth of the people. it was a
privilege to have been able to
be amongst so many different
cultures. Just as it is at the
Martinez, which is a wonderful
hotel that is famous around
the world.”
E st-ce parce qu’elle a été bercée pendant son enfance par
le monde merveilleux de Peter Pan que Wendy Almira
cultive une véritable passion pour les voyages ? Mais pas
pour n’importe quelle destination : celle où le soleil brille,
où les gens prennent le temps de vivre et roulent les « r ».
Pétillante et chaleureuse, Wendy est définitivement une fille du sud. Elle
a longtemps vécu en Guadeloupe, mais c’est à la péninsule ibérique que
va sa préférence, cultivée certainement par ses origines. Elle y a passé
plus de quinze années, sillonnant l’Espagne, la Costa Blanca… avant de
s’envoler pour les Canaries. Un coup de cœur ! Elle y reste dix ans. En
2006, elle décide de revenir en France. Ce sera Cannes, évidemment,
là où le soleil rayonne 300 jours par an, et le Martinez, où elle devient
commis, chef de rang, puis maître d’hôtel. Où ça ? À Zplage pardi, au
plus près de la mer, face aux îles de Lérins. Un joli clin d’œil à ses années
insulaires. « Le rythme est parfois soutenu, mais j’adore. C’est l’une des
plus belles plages de Cannes, le cadre est idyllique ! Chaque année, j’ai
un pincement au cœur lorsque la saison se termine, j’ai hâte d’être au
mois d’avril et d’entamer un nouveau chapitre ». À Zplage, Wendy distille
sa joie de vivre C’est sûr, la vie hispanique lui manque parfois. « J’aime
la vie là-bas, les horaires décalés, la chaleur des habitants. C’est un
privilège d’avoir pu côtoyer autant de cultures différentes. Tout comme
de représenter le Martinez, qui est une magnifique maison, renommée
dans le monde entier ».

C ela fera quatorze ans cette année que Sabri Merabti vit en
France. Son père est français, sa mère tunisienne, et c’est à
Tunis, la capitale du pays du jasmin, qu’il va grandir et faire
toutes ses études. En 1998, cet éternel optimiste décide
de tout quitter par amour pour aller vivre à Cannes, avec
la femme de sa vie, française, rencontrée à Hammamet. Très vite,
il intègre l’économat de l’Hôtel Martinez. Son ouverture d’esprit et
son sens du relationnel font mouche. « J’aime aller vers les autres,
peut-être parce que je suis fils unique et que j’ai toujours eu besoin
du contact avec autrui. Je suis d’une nature sociable et enthousiaste ».
Il officie ensuite aux livraisons des cuisines, puis aux banquets, et en
tant qu’équipier d’étage. Mais Sabri ne compte pas s’arrêter en si bon
chemin. Il entame une année de formation pour passer son Brevet
Professionnel de Gouvernant. Et le voici aujourd’hui à la tête d’une
équipe de six personnes – que des femmes ! - en charge du 4ème étage
du Martinez. Dans cet univers féminin, Sabri s’impose sans difficulté
avec son sourire et sa bonne humeur qu’il s’évertue à transmettre
aux clients. « J’ai toujours un petit mot, une attention pour qu’ils
se sentent en confiance et qu’ils gardent un souvenir inoubliable de
leur séjour ». Nostalgique Sabri ? Pas vraiment. Tout juste avoue-
t-il regretter par moment les délicieuses pâtisseries de son pays. «
J’essaie de me rendre au moins une fois par an en Tunisie. Mais je me
sens tout à fait chez moi ici, à Cannes et au Martinez, où règne un
vrai melting-pot. Un hôtel qui est pour moi à l’image de la France :
métissée ! ».
Sabri merabti, houSekeeper
it will be 14 years this year
that Sabri Merabti has lived
in france. his father is french
and his mother tunisian, and it
was in tunis, the capital of this
country famed for its jasmine,
that Sabri grew up and
studied. in 1998, this eternal
optimist decided to leave
everything for love and go and
live in Cannes with the love of
his life, a frenchwoman he met
in hammamet.
he very quickly joined the
Stores department at the
hôtel Martinez. his open-
mindedness and his ability to
relate to people were a big
hit. “i gravitate towards other
people, maybe because i’m
an only child and i’ve always
needed to have that contact
with other people. i’m really
sociable and enthusiastic.”
he then looked after the
deliveries for the kitchens
and then for banquets as a
floor team member. But Sabri
didn’t want to stop there. he
then did a one year training
course to get his professional
housekeeping diploma and
now heads up a team of 6
people – all women! – and is
responsible for the fourth floor
of the hôtel Martinez. Sabri has
fitted in to this largely women’s
world without any problems,
thanks to his ready smile and
good nature which he makes
every effort to pass on to the
guests. “i always have a little
word with them so that they
feel comfortable and have an
unforgettable memory of their
stay here.” is Sabri homesick?
not really. he just confesses
to sometimes missing the
delicious tunisian patisseries.
“i try to get back to tunisia at
least once a year. But i do feel
completely at home here, in
Cannes and at the Martinez,
where it’s a real melting pot.
the hotel is like france itself –
a real mix!”

at first sight! having come to
spend her summer holidays in
france, dominique geyssens
ended up never going back
home to flanders in Belgium,
where she originally comes
from ghent. “i came to france
for a month and i’ve now been
here for 13 years!” She settled
in the var and worked in the
hotel and restaurant industry,
spending her winters in the
mountains and summers on
the riviera. in 2006 she joined
the Martinez as a receptionist.
this is a role which suits this
multilingual adventurer down
to the ground as she speaks
dutch (her mother tongue),
english, german and french.
“doing my job i get to speak
these four languages every
day.” at the hôtel Martinez
there are always different
nationalities coming and
going. “the hotel is very
internationally orientated. you
can meet people from all over
the world here.” dominique
has no regrets about the path
she’s chosen; on the contrary.
“it’s important to travel, to find
out what’s going on in other
places. it massively increases
your curiosity and makes you a
lot more open-minded. there is
always time to go back home.”
She says this, but there is one
thing she misses, besides her
family who often come to visit
her. “ghent specialities. i miss
waterzooi the most, and chips.
Belgium has the best chips!”
C’ est ce qui s’appelle un coup de cœur ! venue passer
des vacances estivales en France, Dominique Geyssens
n’est finalement jamais rentrée chez elle, en Belgique,
dans les Flandres, d’où cette gantoise est originaire.
« Je suis venue en France pour un mois, et cela fait
maintenant 13 ans que j’y vis ! ». Installée dans le var, elle travaille dans
l’hôtellerie et la restauration, alterne l’hiver à la montagne et l’été sur
la Côte d’Azur. En 2006, elle entre au Martinez comme réceptionniste.
Une mission qui sied à merveille à cette aventurière polyglotte qui
parle le néerlandais (sa langue maternelle), l’anglais, l’allemand et le
français. « Dans mon métier, je parle tous les jours ces quatre langues ».
Il faut dire qu’à l’hôtel Martinez, le ballet des nationalités est sans fin.
« L’établissement est très tourné vers l’international. On y croise des
personnes qui viennent du monde entier ». Dominique ne regrette
rien de son parcours, bien au contraire. « C’est important de voyager,
de découvrir ce qui se passe ailleurs. Cela décuple la curiosité,
l’ouverture d’esprit. On a toujours le temps de revenir chez soi ». Elle
l’avoue, une chose lui manque néanmoins, hormis sa famille qui lui
rend régulièrement visite : « Les spécialités gantoises, le waterzoi en
tête, et les frites. C’est en Belgique qu’elles sont les meilleures ! ».

his brother who lives in Paris,
Milorad, who is originally
from Belgrade, still has fond
memories of arriving in france.
“i had never thought of leaving
my country. But i was won
over by Paris, the Champs-
Élysées, Montmartre. it was
just magical!” and it was here
in the romance capital of the
world that he met the love of
his life and after that Milorad
just had to stay in france. “i fell
in love with this country which
welcomed me with open arms.
i feel french even if in my
heart i am yugoslavian. on the
map we might be separated
geographically from the Croats
but we have a shared identity,
we speak the same language
and we share the same
culture.”
With a diploma certificate
in business, he did a series
of jobs – a driver, delivery
man, carpenter, plasterer
and salesman. in 1997 he
moved his family away from
the stress of life in Paris
and set up home in Cannes.
it was then that he joined
the Martinez as a general
technician. he is a handyman
with outstanding skills and
speaks english, Serbian,
french and russian, but it was
his ingenuity that appealed
to the hotel. “i am a man who
works in the shadows. the
technical department has to
be everywhere all at the same
time. in a hotel this prestigious,
we have to guarantee our
guests’ comfort and we have
to solve a range of different
problems at any one time,
anything from air conditioning
to phone lines.”
P olyvalent, polyglotte… poly-talent pourrait-on dire
de Milorad Maksic. venu rejoindre son frère qui vit à
Paris, ce natif de Belgrade se souvient encore avec
émotion de son arrivée en France. « Je n’avais pas
prévu de quitter mon pays. Mais j’ai été subjugué
par Paris, les Champs-Élysées, Montmartre, c’était magique ! ».
C’est ici, dans la ville des amoureux, qu’il rencontre l’amour de
sa vie. C’est décidé, Milorad restera en France ! « Je suis tombé
amoureux de ce pays qui m’a accueilli à bras ouverts ! Je me
sens français. Même si dans mon cœur, je suis yougoslave. Nous
sommes peut-être séparés géographiquement sur les cartes
avec les croates, mais nous avons une identité commune, nous
parlons la même langue et partageons la même culture ». Titulaire
d’un diplôme de commerce, il enchaîne les petits boulots, tour à
tour chauffeur, livreur, menuisier, plâtrier, commercial. En 1997, il
emmène sa famille loin du stress de la vie parisienne et s’installe
à Cannes. Il entre alors au Martinez comme technicien polyvalent.
Ce bricoleur hors pair parle l’anglais, le serbe, le français et le
russe, mais c’est son ingéniosité qui séduit le palace. « Je suis un
homme de l’ombre. Le service technique est le seul qui doit être
partout à la fois. Dans un hôtel d’un tel prestige, nous sommes les
garants du confort des clients et devons résoudre une multitude
de problèmes à la fois : de la climatisation en passant par les
lignes téléphoniques ».

life. “even though i’m a long
way from my family, friends
and football team, i love life
in france, the atmosphere,
the quality of life, the food,
the wine. i’ve discovered a
love of the simple things. i
can finally breathe again.”
originally from devon in the
south-west of england, he
was set on a brilliant career
in management, working first
in London and then in new
york. But everything changed
when he met his wife who
is french. andy gave up
everything to follow his wife
and set up home in Cannes.
that was in 2008. Since then
he has become head of the
american and British market
at the Martinez – two parts
of the world that are very
important for the hotel as it
attracts a large number of
american and British guests.
“it’s a multicultural hotel
which is skilled in cultivating
a way of life that is both
french and international.
and i love working in such a
cosmopolitan team. it’s really
stimulating as we share a lot.
i would have never thought
to say this before, but now i
think that the atmosphere at
work and the relationships
that i have with my colleagues
are just as important as my
job.” andy says he is still
surprised every time he goes
back across the Channel. “Life
moves at 100 miles an hour
there, it’s exhausting. i am
British, but i have completely
moved over to the french way
of life. So i’m a true european
now!”
Depuis qu’il vit en France, Andy Swan est catégorique :
il prend le temps de vivre ! « Même si je suis loin de
ma famille, de mes amis et de mon équipe de foot,
j’aime la vie en France, l’ambiance, la qualité de vie,
la cuisine, le vin… bref, j’ai retrouvé le plaisir des
choses simples, je respire enfin ! ». Originaire de Devon, dans le
sud de l’Angleterre, il se destine à une brillante carrière dans le
management, travaillant à Londres, puis à New York. Tout bascule
lorsqu’il rencontre son épouse, française. Andy quitte tout pour
suivre sa belle et s’installer à Cannes. C’était en 2008. Depuis,
il est devenu responsable du marché américain et britannique
du Martinez, deux zones géographiques importantes pour le
palace qui attire une large clientèle anglo-saxonne. « C’est un
hôtel multiculturel, qui cultive habilement un art de vivre à la fois
français et international. D’ailleurs, je suis ravi de travailler dans
une équipe cosmopolite. C’est très enrichissant, nous échangeons
beaucoup. Je n’aurais jamais pensé dire cela avant mais,
désormais, l’ambiance au travail et les relations que j’entretiens
avec mes collègues sont à mes yeux tout aussi importantes que
ma mission ». Andy se dit même surpris à chaque fois qu’il franchit
la Manche. « Là-bas la vie défile à 100 à l’heure, c’est épuisant ! Je
suis britannique, mais profondément adepte du mode de vie à la
française. Finalement, je suis un véritable européen ! ».

passion? Being a barman! it’s
now been 21 years that he’s
been working the cocktail
shaker at the famous bar at
the Martinez. it was a career
that he got in to quite by
chance, as he originally
wanted to get into a career
in technical drawing. his
journey to the Martinez has
been rather obscure. Born in
Laos, he suddenly left to go
to france in 1981 where he
arrived as a teenager with his
family. Was it this uprooting
that led him to do a job that
had a strong personal element
to it, to be in a place where
he sees new faces every day?
Probably. “i do get homesick
for Laos. i miss the wilderness,
the food, the amazing
solidarity that there is there
among the people. i go back
there every year to recharge
my batteries. But my daily
life is very fulfilling and i’m
really happy coming to work
here. every day is a pleasure.”
even when he finishes late at
night in the summer? “yes, in
the evenings people are more
relaxed, they speak more freely
and are more open. We are
there to listen to them and be
positive. it’s a job where you
are learning things every day,
about other people or about
yourself. the fact that i come
from a different country with
a different culture is definitely
an advantage: it encourages
conversation and tolerance
because the more differences
there are, the more people
respect each other.”
L a passion de Wong vilay ? Son métier : barman ! Cela fait
21 ans qu’il manie le shaker derrière le bar mythique du
Martinez. Une carrière qu’il a embrassée par hasard, lui qui
se destinait au départ au dessin industriel. Étrange parcours
que le sien. Né au Laos, il quitte soudainement son pays
pour la France en 1981, où il débarque, adolescent, avec sa famille.
Est-ce ce déracinement qui le pousse à exercer un métier avec un fort
relationnel, qui le fait côtoyer tous les jours de nouveaux visages ? Sans
doute. « Il m’arrive d’être nostalgique du Laos, de sa nature sauvage,
de sa cuisine, de l’extraordinaire solidarité aussi qui règne là-bas entre
les individus. J’y retourne tous les ans pour me ressourcer. Pour autant,
mon quotidien me comble totalement, je suis vraiment heureux de venir
travailler ici, c’est tous les jours un plaisir ». Même lorsqu’il termine tard
dans la nuit, l’été ? « Oui. Le soir, les langues se délient, les gens sont
plus détendus et se livrent plus librement. Nous sommes là pour les
écouter et positiver. C’est un métier où l’on apprend tous les jours, sur
les autres et sur soi. Le fait d’être issu d’un autre pays avec une culture
différente est incontestablement un atout : cela favorise les échanges et
la tolérance, car plus il y a de différences, plus les gens se respectent ».

L ’histoire de Chopard ressemble bel et bien à une saga, sur
laquelle les marques concurrentes ne manquent pas de lorgner.
Si elle est l’initiative d’un homme, Louis-Ulysse Chopard, elle
symbolise la réussite d’une famille toute entière. 150 ans après
la création de son premier atelier, l’entreprise artisanale illumine
le monde de la haute horlogerie et de l’orfèvrerie d’exception.
une hiStoire de racineS
Louis-Ulysee Chopard fonde la manufacture du même nom en 1860 dans le
Jura suisse et acquiert une solide tradition artisanale. En 1963, Karl Scheufele,
lui-même issu d’une dynastie d’horlogers bijoutiers allemands, rachète
la marque. Au cours des dix années qui suivront, le couple Scheufeule
fait renaître la maison et la transforme en une marque internationale
d’horlogerie-bijouterie. Les succès s’enchaînent alors au fil des courants et
des modes. Puis, dans les années 1990, Caroline Gruosi-Scheufle et son frère
Karl-Friedrich décident de réinterpréter la tradition familiale. Caroline initie
des collections de haute joaillerie. Dynamique et créative, elle développe les
boutiques et affirme la présence de la marque dans le monde entier. De son
côté, Karl fonde une manufacture de haute horlogerie (1996) dédiée aux
montres pour hommes, des montres mécaniques dites à complication, dont
la sophistication technique sera vite remarquée. Le premier calibre, baptisé
« L.U.C », sera présenté en 1995. La production se structure alors, jusqu’au
bâtiment ultra moderne qui accueille aujourd’hui 145 personnes.

Si chacun connaît la célèbre collection de montres Happy Diamonds dont
les diamants s’agitent sous leur cadran ou encore la présence remarquée
de la marque sur les plus beaux tapis rouges, beaucoup ignorent qu’elle est
l’une des rares maisons de ce rang à fabriquer l’intégralité de ses pièces,
montres et bijoux. C’est l’occasion de souligner la multiplicité des métiers
et l’ampleur d’un savoir-faire aux origines traditionnelles. recherche et
développement, design, sculpture sur cire des prototypes, sertissage,

métrage recevra ce trophée des mains de Nanni Moretti,
président de cette 65e édition. Le joaillier genevois
a également dessiné son Trophée Chopard, soit deux
mini répliques de la palme qu’il remet en marge de la
cérémonie officielle aux prix d’interprétation masculine
et féminine. Chaque année, à l’approche du festival, la
presse du monde entier retient son souffle dans l’attente
de découvrir la fameuse collection « red Carpet » qui
cette année est composée de 65 pièces en l’honneur
de… la 65e édition, pardi ! Caroline Sheufele y insuffle
toute sa passion et son énergie créative. Cette frénésie

É vénement sur la Croisette. L.raphael a
lancé en mars 2012 son premier temple
de la beauté et du bien-être en France.
Et c’est au Martinez, dans l’un des plus
beaux hôtels de Cannes, que la marque
genevoise a choisi de faire escale. « Il n’y a qu’un seul
Beauty Spa L.raphael en France, et c’est à Cannes,
au Martinez, qu’il est situé ! », se réjouit richard
Schilling, le directeur de l’hôtel. Il faut dire qu’entre
ces deux acteurs emblématiques du luxe et de la
beauté, l’histoire a commencé il y a déjà plusieurs
années. Sur les recommandations de Chopard, un
spa L.raphael éphémère est aménagé en mai 2010
dans l’une des suites du Martinez pendant toute la
durée du Festival de Cannes. Le succès est tel que
l’expérience est reconduite l’année suivante. Les
stars présentes au festival accourent pour goûter à
l’un des soins miracles de la marque.
deS SoinS haute couture
À l’origine de L.raphael, une femme : ronit raphaël.
À 18 ans, elle est très gravement brûlée à la suite
d’un peeling qui la contraint à de nombreuses
hospitalisations. Pendant des années, elle va se
battre pour guérir.
« Même si je n’avais jamais rêvé ou prévu de consacrer
ma vie à une carrière dans le domaine esthétique,
j’ai décidé d’étudier la science des soins de la peau,
pour mieux comprendre ce qui m’était arrivé et
pourquoi cela m’était arrivé, confie-t-elle. Grâce à
mon expérience personnelle et à mes études, j’ai
acquis la conviction que l’on pouvait avoir une belle

several years ago. on Swiss

was installed in one of the
Martinez’ suites during the
Cannes film festival in May
2010. its success was such
that it was decided to renew
the operation the following
year. the celebrities attending
the festival flocked to try out
one of the brand’s miracle
treatments.

esthétique, et le Professeur Meir Shinitzky, pionnier

Beauté” voit le jour à Genève en 2005, suivi par un

toujours fait la chasse au gaspillage et veillé à réduire
au maximum notre empreinte carbone ». Preuve de
cet engagement de longue date, le Martinez a été
l’un des premiers hôtels en France à être certifié
Green Globe en 2010 et le premier sur la Croisette !
une démarche gLobaLe
Mais au-delà de la certification Green Globe, ce que
souhaite mettre en œuvre le Martinez, c’est avant tout
une démarche globale. Des éco-gestes du quotidien
(la récupération des stylos usagers, la collecte de
bouchons de liège pour la lutte contre le cancer,
l’utilisation de produits d’entretien éco-labellisés,
le tri des déchets…) à des actions citoyennes plus
marquantes, comme l’accessibilité du site Internet
du Martinez aux déficients visuels : cette démarche
responsable s’exerce à de multiples niveaux. « Ce
qui nous importe, c’est de mener des actions concrètes
au sein de partenariats qui s’inscrivent dans la durée »,
insiste Florence Gardrat. Comme l’ensemble des
établissements du groupe Concorde Hôtels & resorts
auquel il appartient, le Martinez est engagé auprès
de CArE France pour aider les populations locales.
Comment ? En incitant les clients à faire don de leurs
miles, en organisant des tombolas dont les sommes
sont reversées à l’association, ou en supportant
activement des projets comme l’accès à l’eau au
Nicaragua ou la lutte contre la déforestation au Bénin.
Sur le plan local, le Martinez soutient activement

au développement durable. « Beaucoup de nos
salariés se sont portés volontaires pour participer en
2011 à l’opération phare de l’association, ‘Nettoyons
la nature’, ce fut une belle réussite ! », se réjouit
Florence Gardrat. Le Martinez travaille également
étroitement avec l’ESAT (Établissement et Service
d’Aide par le Travail) installé à la roquette sur
Siagne. Les travailleurs handicapés de cet organisme
ont planté un potager qui fournit régulièrement les
cuisines de l’hôtel en légumes frais. Dernière action
en date : l’hôtel parraine une ruche installée sur les
hauteurs de Nice avec l’association « Un toit pour les
abeilles » qui participe à la sauvegarde des abeilles.
impLiquer LeS coLLaborateurS
Un paramètre reste essentiel pour l’hôtel : sensibiliser
ses salariés à cette démarche proactive. À leur
disposition, se trouve une boîte à idées dans laquelle
ils sont invités à proposer des actions de rSE
concrètes. « Tous les trimestres, nous sélectionnons
la meilleure d’entre elles et nous la mettons en place
dans les plus brefs délais. L’engagement citoyen,
c’est une démarche qui se vit au quotidien », souligne
Florence Gardrat. Preuve en est avec la toute
dernière formation dispensée aux employés : un
« Serious Game » intitulé « Expert Planetlab ». L’intérêt :
permettre à chacun d’avoir une meilleure vision des
enjeux du développement durable dans son métier.

nevertheless, there is still a key
issue for the hotel: educating
its employees in this proactive
approach. there is a suggestion
box at their disposal where
they are invited to propose

quarter, we select the best
ones and we implement them

L e Guide Michelin l’a auréolé de deux
étoiles depuis quelques années déjà. Une
reconnaissance, celle de son talent de
cuisinier. Mais c’est la tête que Christian
Sinicropi a dans les étoiles. Et nul besoin
de goûter ses recettes pour s’en rendre compte.
L’homme a une imagination débordante et il partage
cette passion créative avec Catherine, son épouse.
Existerait-il donc deux Christian Sinicropi ? Pas si
simple… Et dans le même temps, pas si compliqué
non plus. Car si le chef est ce qu’il est aujourd’hui, il le
doit à l’artiste qui sommeillait en lui. Quant à l’artiste,
il ne serait sans doute pas ce qu’il est sans le chef !
Drôle d’histoire que celle de Christian Sinicropi ! On
passera sur ses débuts, en 1989… à l’Hôtel Martinez.
À peine évoquera-t-on son expérience à l’Hôtel du
Palais à Biarritz, puis au Buerehiesel à Strasbourg.
Son Cv mentionne également Alain Ducasse et
le Louis Xv de Monaco. On y apprend qu’en 2001,
il revient à l’Hôtel Martinez, d’abord comme chef
tournant, puis comme chef de La Palme d’Or. Mais
ce professionnel qui n’entre dans aucun moule et
porte une veste de couleur pomme granny (quand
ses confrères s’habillent de blanc) ne s’occupe pas
que de plats. Ou plutôt, il s’en occupe doublement.
Car depuis 2006, il a concrétisé un rêve, celui de
réaliser ses assiettes. Ainsi que d’autres contenants
d’ailleurs.

it’s not that simple – yet
at the same time, not that
complicated either. for if the
chef has become what he is
today it is all down to his inner
artist. and as for the artist, he
would probably not be where
he is today without the chef!
Christian Sinicropi’s story is
a strange one. We won’t go
into his early career in 1989 at
the hotel Martinez. nor will we
mention his time at the hotel
du Palais in Biarritz and then
the Buerehiesel in Strasbourg.
his resumé also mentions
alain ducasse and the Louis
Xv in Monaco. We learn that in
2001 he returned to the hotel
Martinez, firstly as a relief cook
and then as chef at the La
Palme d’or restaurant. But this
non-conformist professional
who wears an acid-green
jacket (while other chefs
dress in white) does not deal
only with dishes. or rather, he
e = Sc2Perfectionniste, comme toujours, il a pris des cours,
à l’École des Beaux-Arts de vallauris, haut lieu de
la céramique. Un an pour apprendre le b.a.ba et
se familiariser avec cet art devenu majeur. Puis
il a rencontré Jean Camos, figure de la cité des
potiers. Avec lui, il a découvert comment fabriquer
ses moules. Parce que Christian Sinicropi, s’il a
de multiples idées, n’aime pas perdre son temps
et les intermédiaires restent, pour lui, une perte
de temps et d’énergie. Aujourd’hui, il est capable
de tout réaliser lui-même de A à Z. Non, pas tout
seul. Avec Catherine, son épouse, d’où le nom de sa
marque : E = SC2. Dans leur maison, à la roquette
sur Siagne, ils ont installé un atelier et un four. Et
c’est là, dans le secret de cet atelier, que le tandem
donne vie à de la céramique. Il lui transmet l’idée
et le dessin, elle réalise le prototype. Si nécessaire,
il fait un moule. Et il avoue humblement que, dans
cette histoire : « C’est Cathy qui fait le plus gros
travail ». Cette partition à quatre mains, les Sinicropi
la jouent très régulièrement. Parce qu’ils proposent
deux collections par an, à l’instar de la mode, une
printemps / été, une automne / hiver. Et ils sont
autonomes et fiers de l’être.
un pLat, une aSSiette
Et justement : la collection printemps / été 2012
vient à peine de sortir des cartons. On la retrouve
dans les cuisines de l’Hôtel Martinez d’abord, sur

took classes at the ecole des
Beaux-arts (School of fine
arts) in vallauris, a mecca for
ceramics. it took him a year to

grips with this now major craft.
then he met Jean Camos, a

village. With him, he learned
how to make his own moulds.
With his abundance of ideas,
Christian Sinicropi does not
like to waste time and he
considers using middlemen
to be a waste of time and
energy. he is now able to do
everything himself, from a to
Z. But he doesn’t do it on his
own: his wife Catherine is at
his side, giving rise to their
brand name of e = SC2. in their
house in roquefort-les-Pins
they have set up a workshop
and kiln. here, in the secrecy
of their workshop, the pair
bring their ceramics to life. he
provides the inspiration and
design and she produces the
prototype. if necessary, he
makes a mould. he humbly
admits that in this scenario
«Cathy has the most work to
do». the Sinicropis play this
duet very regularly, for as
in the world of fashion they
release two annual collections:
spring/summer and autumn/
winter. they are independent
and proud of it.

les tables du restaurant ensuite. Comme toujours,
Christian et Catherine Sinicropi étonnent. Il y a là
« La ronda », un œuf d’autruche moulé qui accueille
de toutes petites abeilles : « Main tendue version 5 »
ou encore « Carrousel », parfait pour mettre en
scène ces canapés que le chef appelle des frivolités.
Ils sont multicolores ces manèges en céramique et
offrent une note dynamique et pleine de fraîcheur à
l’heure de l’apéritif. rouge, orange, bleu, vert, lilas…
c’est la valse des carrousels, sur le mode allegro.
« Fungia » ressemble étrangement à un corail. C’est un
corail ! Christian Sinicropi l’a découvert à l’Ile Maurice
et ce nouveau contenant va abriter des gamberoni.
« Pelagus », qui signifie mer en latin, existe en version
orange et grise ; une daurade va venir s’y allonger.
« Homard » et « Oursin », le premier d’un joli rouge,
le second blanc, s’adressent aux produits éponymes.
À l’heure de dresser ces assiettes pas comme les
autres, le chef veille, l’artiste aussi. Tout doit être
impeccable. Les produits, leur association, le mariage
entre la recette et son plat. Difficile équation que
Christian Sinicropi résout avec doigté.
un artiSte à part entière
Lorsqu’il enlève sa veste de chef, Christian Sinicropi
redevient l’artiste (qu’il n’a jamais cessé d’être
en réalité). Et que fait-il ? Il crée, tous azimuts. Il
peint, il sculpte, se dirigeant de plus en plus vers le
contemporain. Touche-à-tout, mais tout à fond, il ne
se donne pas de limite. Son autoportrait le prouve.
Cette sculpture, en terre, il l’a réalisée un jour, entre
minuit et quatre heures du matin. Le résultat est

«fungia» looks remarkably like

Mauritius, and will use the new
recipient to hold gamberoni.
«Pelagus», meaning the sea
in Latin, is available in orange
and grey and is used to
serve sea-bream. «Lobster»
and «Sea urchin», the
first in a pretty shade of
red and the second in
white, are designed for
sea-food bearing the
same names. When

de ce vide qui prend tellement de place et de sa signification. Christian Sinicropi n’en a cure. Il poursuit
son chemin artistique. Du 8 juin au 31 octobre 2012, le Musée Escoffier de villeneuve-Loubet célèbrera son
« œuvre » en lui offrant une pièce entière, un peu comme une page blanche ou une porte ouverte. L’exposition
s’appelle « Unique…s » et le chef y présentera, outre ses assiettes et autres plats, des photos, des tableaux,
son autoportrait ainsi qu’un film relatant la création de sa production. Alors, où commence le chef, où s’arrête
l’artiste ? De l’art culinaire à l’art tout court, Christian Sinicropi crée. Avec Catherine et seul. Demain ? Nul ne

it be culinary art or any other
art form, Christian Sinicropi is
a creator, both with Catherine
and on his own. What does

tell where he will be, not even

de céréales », et Casino prenait la forme d’un « filet de bar de Méditerranée déguisé en homard, poupeton de fleur
iodée, poêlée de courgettes chiffrées aux goûts de la riviera, condiments de chair de homard aux grains de riz soufflé
et pois gourmands ». Le tout présenté dans des assiettes signées E = SC2 bien sûr !

it is served. in 2011 robert de niro inspired the chef

qu’ils manient de la pointe du couteau ! « Nous avons
eu la chance d’avoir une grande cuisine classique et
l’évolution des nouvelles techniques nous a permis de
la réinterpréter », notent les frères Cerea, Enrico et
roberto. Là-bas, comme ici, les toques recherchent
les bons produits, issus de productions sérieuses. Le
maître-mot : respect de la matière première. « Il faut
respecter la tradition, mais il est impossible, en 2012,
de reprendre à l’identique les recettes d’autrefois !,
note Béatrice Segoni. On mange plus léger, moins
gras et surtout moins. Ce qu’il faut absolument, c’est
privilégier les produits de qualité, parce qu’on s’en
rend compte lorsque l’on passe à table. » Un constat
approuvé par Enrico Cerea : « En Italie, nous avons la
chance d’avoir à notre portée des produits de base
avec lesquels nous allons pouvoir faire des choses
extraordinaires, pour peu que l’on ait un minimum
de technique. Prenez les pâtes : n’est-ce pas un
produit simple ? Pourtant, associé à de la truffe
blanche, à des champignons, à du poisson…, quelle
métamorphose ! »

forêt. Car la « Botte » la plus célèbre au monde recèle

une belle diversité, explique Kotaro Noda. Au niveau
des viandes, des poissons, mais aussi des fruits et
des légumes. Je pense qu’aujourd’hui, la cuisine
italienne devient plus raffinée tout en restant simple
et authentique. » Et c’est peut-être là que réside la
grande évolution de ces trente dernières années.
« Une cuisine plus élaborée, plus recherchée, qui n’a
pas perdu son identité, au contraire ! », comme le
souligne très justement Alfonso Iaccarino. Un brin

Elle signe une recette qui a séduit Christian Sinicropi. Le chef cannois ne pouvait que plébisciter le parcours de cette femme hors norme qui
n’hésite pas à dire : « Dans mon sang coule de l’art. » Des artistes, sa famille en compte beaucoup : elle-même jouait déjà du violon à six ans.
Avant de se tourner vers d’autres passions. Car Ning Zhang reste insatiable. rédactrice en chef de Target Magazine (un journal lifestyle haut de
gamme qui existe depuis douze ans), Ning Zhang a décidé, un jour, de promouvoir d’autres artistes. Elle ouvre donc « 798 Art Area » à Pékin,
un espace de plus de 400 m2, avec une hauteur de neuf mètres sous plafond, où elle va imaginer un concept inédit : exposer du mobilier et des
objets design, mais aussi des antiquités, et proposer de la restauration, à condition bien sûr de
réserver le lieu. « J’ai voulu que ma galerie fasse intervenir tous les sens : la vue, l’ouïe, le toucher,
l’odorat et le goût. J’aimerais donner de l’inspiration et de la joie aux gens. » Épicurienne, la
jeune femme apprécie la bonne chère et n’hésite pas à se lancer et à créer sa propre cuisine. Des
préparations basées sur le goût, « un mélange d’art et d’amour », qu’elle présente de manière très
étudiée, parce que, dit-elle, « il faut combiner l’aspect visuel et gustatif. » Adepte des recettes
légères, Ning Zhang s’attache à toujours choisir des contenants appropriés et esthétiques, en
phase avec ses recettes. Au royaume de l’art, tout n’est qu’harmonie.

chef could only applaud this extraordinary woman who’s proud to say “art is in my blood”.
her family is replete with artists: she herself could play the violin by six years old, before
turning her hand to other passions. that’s because ning Zhang remains insatiable. editor-
in-chief of target Magazine (an upmarket lifestyle magazine that’s been around for twelve
years), one day ning Zhang decided to promote other artists. So she opened “798 art
area” in Beijing, a space measuring more than 400 m2, and nine metres in height, where

well antiques, combined with a restaurant, where booking a table is required, naturally. “i
wanted my gallery to stimulate all the senses: sight, sound, touch, smell and taste. i would

good food and doesn’t hesitate to get involved and create her own cuisine. dishes based
on taste offer “a mixture of art and love”, which she presents particularly carefully because,
she says, “you have to combine the visual and the gastronomic.” With a love for light
recipes, ning Zhang always makes sure she chooses the most aesthetically pleasing

Tout commence en 1240. Cette année-là,
Thibaud Iv, Comte de Champagne, roi
de Navarre, rentre de Chypre avec un
plant de vigne. Cet ancêtre du cépage
Chardonnay va donner naissance au
vignoble actuel. Bien plus tard, en 1734, une maison
de commerce de vin de Champagne voit le jour.
Deux siècles s’écoulent avant l’acquisition par Pierre
Taittinger, issu d’une famille de négociants en vins
de Champagne, du Château de la Marquetterie, près
d’Epernay. L’histoire de ce conte moderne dont le
champagne est la vedette est en route. De 1945 à
1960, François Taittinger, troisième fils de Pierre, veille
aux destinées de la maison, secondé par ses deux
frères, Jean et Claude. Les Champagnes Taittinger
s’établissent dans les caves de l’Abbaye Saint-Nicaise,
un lieu bâti sur des crayères gallo-romaines du Ive
siècle. Il est décidé que le Chardonnay deviendra le
plant dominant de la marque, parce qu’il révèle des
qualités incomparables de finesse, de légèreté et
d’élégance. Le destin, encore lui, va frapper. François
se tue dans un accident de voiture et Jean entre en
politique : il devient maire de reims, puis ministre
de la Justice sous Georges Pompidou. Claude doit
prendre les rênes de la maison. Il les gardera jusqu’en
2006. Alors qu’en 1960, l’entreprise Taittinger
expédie 800.000 bouteilles, sous son impulsion, le
chiffre passe à 4,5 millions en 2010 ! C’est sous sa
direction aussi que naît le Prix Culinaire International
Pierre Taittinger, en 1967. Des chefs étoilés, parmi
lesquels Joël robuchon, régis Marcon ou Stéphane
Philippon l’ont reçu.

lightness and elegance. the
family was then to be struck
once more by destiny. françois
was killed in a car accident
and Jean entered politics,
becoming Mayor of reims
and then Minister for Justice
under georges Pompidou.
it was left to Claude to take
over the running of the house.
he continued to do this until
2006. under his guidance,

pour la famille Taittinger. En juillet 2005, elle vend
Champagne Taittinger et sa filiale Société du Louvre
au fonds de pension américain Starwood. Les maisons
de Champagne, mais également les vignerons-
producteurs, les coopérateurs, les distributeurs et les
clients, c’est-à-dire toute la profession, estimaient
alors que les objectifs de rentabilité à moyen
terme n’allaient pas de pair avec la production d’un
champagne de qualité, digne du nom Taittinger.
Moins d’un an plus tard, le 31 mai 2006, nouveau
coup de théâtre. Pierre-Emmanuel Taittinger, avec la
Caisse régionale Nord-Est du Crédit Agricole, rachète
l’affaire familiale pour 660 millions d’euros. L’histoire
continue… Le domaine couvre alors 288,84 hectares
de vignobles et ne compte pas moins de 13 millions
de bouteilles en stock. Dans l’escarcelle de Pierre-
Emmanuel, figurent le Château de la Marquetterie et
les caves. Champagne Taittinger reste un must dans
l’univers du Champagne. Ses cuvées de prestige
signent un savoir-faire qui ne date pas d’aujourd’hui.
Tout un art.
À l’instar d’un artiste qui signe son œuvre, la famille
Taittinger signe ses bouteilles et fait appel à des
artistes de renom, comme pour la série très spéciale,
la « Taittinger Collection », résultat d’une étonnante
rencontre entre un grand vin et des grands noms de
l’art.

the 2000S2005 and 2006 were eventful years for the taittinger family. in July 2005,
Champagne taittinger and its subsidiary Société du Louvre were sold to
the american pension fund Starwood. at the time the entire industry, from
Champagne houses to winegrowers, cooperatives, distributors
and clients, felt that medium-term profitability targets were
incompatible with production of quality champagne worthy of
the name of taittinger. Less than a year later, on May 31st, 2006,
there was another dramatic development. Pierre-emmanuel
taittinger, with the north east branch of Crédit agricole, bought
back the family business for 660 million euros. and so the family
story continued. the estate now covered 288.84 hectares of
vineyard and had no less than 13 million bottles in stock. Pierre-
emmanuel also owned the Château de la Marquetterie and
the cellars. Champagne taittinger has remained a legend in
the champagne sector. its prestige cuvées bear witness to
a savoir-faire that has been honed over generations. this
expertise is nothing less than an art.
and just as an artist signs their work, the taittinger family
signs its bottles by commissioning prominent artists to
personalise their limited editions, such as the taittinger
Collection which unites a great wine with some of the major
names of contemporary art.

C’ est l’histoire d’une rencontre entre
un peuple venu de contrées glaciales
et un coin de paradis terrestre. Les
mémoires se souviennent d’abord
de Nicolas Gogol, l’écrivain qui fit un
séjour à Nice en 1840. Mais ce n’est pas lui qui fonde
la colonie slave. Il faut attendre 1856 pour que tous les
yeux de la cour de russie se tournent vers la province
Sarde et ses environs. L’Impératrice douairière,
Alexandra Fiodorovna, veuve de Nicolas Ier, effectue
des séjours prolongés à Nice, transformant la ville
en « Capitale d’hiver ».Les somptueuses propriétés
fleurissent alors, édifiées par les aristocrates et
grands bourgeois, qui accompagnent la Tsarine
durant ses cures. C’est à cette même époque, en 1860,
qu’est créé le département des Alpes-Maritimes,
après l’annexion par la France du Comté de Nice.
De Cannes à Menton, la riviera grouille de quartiers
russes, allant jusqu’à concurrencer la communauté
anglaise, qui avait emboîté le pas du célèbre Lord
Brougham. À Cannes, celui qui donne l’accent Slave
à ce petit village provençal est Eugène Tripet, Consul
de France à Moscou. En route pour Naples en 1848, il
doit rebrousser chemin à la frontière sarde, à l’époque
Nice, pour cause d’épidémie. Sa femme Alexandra
Tripet-Skrypitzine, aristocrate russe, s’éprend des
lieux et fait acheter de vastes terrains. Et c’est ainsi
qu’en 1850 est construite la première villa russe
cannoise, la villa Alexandra.

paradise. at first, one thinks of
nicholas gogol, the writer who
sojourned in nice in 1840. But
he is not the founder of the
Slavic colony. it was not until
1856 that all the russian court
became fixed on nice and
its region, which at the time
was part of the Kingdom of
Sardinia. the dowager empress,
alexandra feodorovna, widow
of nicholas i, stayed for an
extended period in nice,
transforming the city into a
“Winter Capital”. Sumptuous
properties flourished,
constructed by aristocrats
and the upper class who
accompanied the tsarina during
her spa treatments. at the
same time, the alpes-Martimes
department was created
in 1860, following france’s
annexation of the County of
nice. from Cannes to Menton,
the riviera was bursting with
russian neighbourhoods, even
rivalling the english community
that had followed the famous
Lord Brougham to the region.
in Cannes, it was one eugène
tripet, french ambassador in
Moscow, who gave the small
Provence village a touch of
Slavic. en route to naples in
1848, an epidemic drove him
back to the Sardinian border,
at the time the city of nice. his
wife, a russian aristocrat named

Mais la Côte d’Azur se révèle être aussi un lieu
stratégique. En effet, suite à la guerre de Crimée
(1856), l’Empire russe n’a plus de débouché sur la
Méditerranée. C’est ainsi que grâce à l’entremise de la
Tsarine Alexandra, victor-Emmanuel II, roi de Sardaigne
et bientôt d’Italie, loue la rade de villefranche-sur-Mer
en 1859 à la russie. Très pieuse, cette même Tsarine
fait construire l‘église « Saint-Nicolas et Sainte-
Alexandra », le premier sanctuaire russe d’Europe de
l’Ouest, inauguré à Nice en 1859. C’est aussi à Nice
que se jouent de véritables drames familiaux. Le
Grand-Duc héritier Nicolas décède en 1865 à la villa
Bermond, une demeure louée par son père le Tsar
Alexandre II. Ce dernier acquiert alors la propriété,
la fait raser et y érige une chapelle commémorative
à la mémoire de son fils. C’est dans l’enceinte de ce
même parc Bermond que sera construite, en 1912, la
cathédrale orthodoxe russe Saint-Nicolas. Meurtrie
par le souvenir de ce fils parti trop tôt, la Tsarine
Marie-Alexandrovna, femme d’Alexandre II, « émigre »
à Cannes en octobre 1879. La ville s’en souvient encore.
Arrivée en gare, l’impératrice fut reçue par un comité
officiel. Elle prit place dans un landau découvert
et sa suite nécessita dix voitures. Le personnel, lui,
suivit dans dix-sept autres. Ses sujets la rejoignirent
en masse. À tel point que ce petit coin de Provence
reçoit aussi son église en 1894, celle de Saint-Michel
Archange. Ainsi, si au départ ce sont des intérêts
stratégiques qui expliquent son arrivée massive sur
la Côte d’Azur, la communauté slave a finalement
choisi de s’installer durablement sur les bords de la
Méditerranée. Les églises côtoient hôtels et casinos et
ce sont des années somme toute heureuses pour ces
touristes influents. De Cannes à Menton, les fêtes et
réceptions données dans les villas n’ont d’égales que
le doux et franc soleil de la Côte d’Azur. Le XXe siècle
apportera son lot de bouleversements…

But the riviera also turns out
to be a strategic place. after
the Crimean War (1856), the
russian empire no longer had a
presence on the Mediterranean.
thanks to the intervention
of tsarine alexandra, victor-
emmanuel ii, King of Sardinia
and soon King of italy, rents
the harbour of villefranche-
sur-Mer to russia in 1859. the
tsarine herself is very religious
and builds the Church of Saint-
nicolas and Saint alexandra,
the first russian sanctuary in
Western europe, inaugurated
in nice in 1859. But nice is
also the scene of real live
family dramas. heir apparent
and grand duke nicholas dies
in 1865 in the villa Bermond,
a residence being rented by
his father tsar alexander ii.
alexander goes on to buy the
property, tears it down and
constructs a memorial chapel
dedicated to his son. Later in
1912, the russian orthodox
Cathedral Saint nicholas will
be built on the grounds of this
same Bermond Park. tsarine
Marie-alexandrovna, wife of
alexander ii, is so haunted
by the memory of this son
who died too soon that she
“emigrates” to Cannes in 1879,
an event which the town still
remembers to this day. upon
arriving at the train station, the
empress was welcomed by an
official committee. She took
her place in an open carriage
while her entourage required
another 10 vehicles. the
personnel themselves followed
in another seventeen carriages.
her subjects came in droves
to join her. the momentum
was such that in 1894, this
little corner of Provence also
became home to her church,
Saint Michael the archangel.
While initially, strategic interests
are the reason behind the
massive Slavic exodus to the
Côte d’azur, the community
ultimately chose to settle
permanently on the shores
of the Mediterranean. the
churches stood next to hotels
and casinos and, all in all,
these were happy times for
these influential tourists. from

1917 : En pleine guerre mondiale, éclate en russie la
« révolution d’Octobre ». L’armée bolchevik prend
finalement le pas sur les « russes blancs », partisans
du Tsar Nicolas II. À la suite de cette défaite, ce sont
deux millions de personnes qui s’exilent, dont quelque
quatre cent mille seulement en France. L’aristocratie
russe se fixe naturellement sur la riviera française.
L’Histoire veut que celui qui est la cause de leurs
malheurs, Lénine, tombe comme eux fou amoureux
du Midi. C’est ainsi qu’en 1911, il loge à Nice à l’Hôtel
l’Oasis. Déracinés, ruinés, ces « russes blancs »
arrivent dans les années vingt et se fondent dans la
population, sauvegardant leurs identités à travers la
religion orthodoxe. L’Empire des romanov devient
l’Union Soviétique pendant plus de soixante-dix
ans, laissant la Côte d’Azur à d’autres nationalités.
Aujourd’hui, les russes réapparaissent. Mais ce ne
sont plus les mêmes Tsars qui passent l’hiver à Cannes
ou à Nice. Magnats industriels, hommes politiques,
tous reviennent sous le soleil d’une riviera qui leur
a toujours tendu les bras. Clin d’œil de l’histoire, ils
réinvestissent les quartiers russes à Cannes. Manière
de rendre hommage à ceux qui n’étaient pas vraiment
leurs parents, mais certainement leurs ancêtres
hivernants.

forthright sun of the riviera. the
20th century would bring on its
own upheavals.
From “white ruSSianS” to the new tSarS
the year is 1917 – right in the
middle of World War i, the
“october revolution” breaks
out in russia. the Bolshevik
army finally overwhelms the
“White russians”, supporters
of tsar nicholas ii. following
this defeat, two million people
go into exile – 400,000 settle
in france alone. the russian
aristocracy naturally sets its
sights on the french riviera. as
history would have it, the author
of their troubles, Lenin, falls
head-over-heels in love with
Southern france, sojourning
in the hôtel l’oasis in 1911. the
“White russians”, homeless and
broke, arrive in the twenties and
blend in with the population,
safeguarding their identity
through their orthodox religion.
the romanov empire becomes
the Soviet union for more than
70 years, ceding the riviera to
other nationalities. But now
the russians are back, although
they are no longer the same
tsars spending their winters
in Cannes or nice. industry
magnates, politicians – they are
all returning to the sunshine
of a riviera that has always
welcomed them. through a wink
of history, they are investing
again in the russian section of
Cannes, as a way to pay tribute
to those who are not really their
forbearers but certainly their
winter ancestors.
C’est au cœur de Nice, dans le célèbre Parc Bermond, là même où se trouve la chapelle érigée en mémoire du Grand-Duc Nicolas, que se dresse la
Cathédrale orthodoxe russe Saint-Nicolas. Achevée en 1912 pour le plus grand bonheur d’une communauté qui ne cessait de croître, elle est placée
sous le patronage du dernier Tsar Nicolas II. Considérée comme la plus belle cathédrale russe hors de russie, on la doit à l’architecte de la cour,
Préobranjensky. Haute de cinquante-deux mètres et de style « vieux russien », elle est caractéristique par ses bulbes polychromes et ses dômes
torsadés. L’église rappelle la célèbre cathédrale « Saint-Basile Le Bienheureux » qui illumine la Place rouge à Moscou. Adoptant la forme d’une
croix grecque, l’intérieur de l’église bénéficie d’un riche décor contrastant avec l’exigüité des lieux. Si la fabuleuse cathédrale fête cette année ses
cent ans, elle est aussi au centre d’un conflit judiciaire avec la Fédération de russie qui vient d’en récupérer la propriété.

in memory of the grand duke nicholas. the cathedral was funded by
the last tsar nicholas ii and completed in 1912, to the delight of the still
very religious community. designed by court architect Preobrazhensky,
it is considered to be the most beautiful russian cathedral outside
of russia. the fifty-two meter high edifice is in the “old russian”
architectural style and is characterized by its polychromatic onion and
twisted tent-like domes. the church recalls the famous cathedral Saint
vasily the Blessed that lights up the red Square in Moscow. Laid out
in the shape of a greek cross, the church’s interior is graced with a rich
décor in stark contrast to its cramped surroundings. While the fabulous
cathedral is celebrating its 100th anniversary this year, it is also the
centre of a legal battle with the russian federation, which has just
recovered the property.
