2017/2018 *Protected Designation of Origin Fitou Borrowing from the soil of the maritim Fitou, we are already here, on hills where pink shale and limestone mix. The traditional vinification is carried out with pumping over, alternating from punching down in vat for about 3 weeks. After fermentation, maturing for 9 months for 2/3 of the cuvée in concrete vats and 1/3 in oak barrels until blending, one month before bottling . A wine of gourmet pleasure and racy, it will perfectly match a tasty and characterful cuisine (pieces of grilled meat, game and simmered dishes...). Essentially composed of Carignan(38%) with old black Lladoner Pelut(17%) which is the Catalan cousin of Grenache , Syrah (25%) and Mourvèdre(20%) to bring flexibility, structure, emotion… The nose is intense, with fresh fruit, spicy chocolate and even blood notes : vinification in the respect of the grape and its terroir for our and your pleasure.
