L’entreprise familiale Les Trois Abeilles est une illustre représentante de ces maîtres nougatiers.

De père en fils, la fabrication artisanale et traditionnelle de cette gourmandise a acquis ses lettres de

noblesse et a pris toute sa valeur et ses richesses. Aujourd’hui, dans le pur respect de la tradition et

des méthodes de fabrication, nous marions avec perfection les meilleurs ingrédients issus de notre

pays, amandes, miel de lavande de Provence et orchestrons des rencontres inédites entre cette pâte

blanche et le chocolat, le cacao, les noix…

On retrouve trace de cette friandise au moyen âge où elle ne s’appelait pas encore nougat mais

nogat. Il s’agissait d’un gâteau à base de miel et de noix.

C’est la Provence qui lui donna sa nouvelle composition au XVIIème siècle. A cette époque, suivant

l’exemple du célèbre agronome français Olivier de Serres, de nombreux Provençaux plantèrent des

amandiers sur le sol des collines arides.

Les pâtissiers remplacèrent les noix par des amandes, une partie du miel par du sucre. L’adjonction

de blanc d’œuf vint aérer et blanchir la pâte.

Alors que notre nougat a déjà fait plusieurs fois le tour du monde, les hommes et les femmes de nos

ateliers, artisans de ce parfait mélange entre goût et originalité, continuent à perpétuer cette tradition

ancestrale du Nougat de Montélimar. Amoureux des bonnes choses, nous n’hésitons pas à

sélectionner des matières premières de qualité et nous en utilisons suffisamment pour que nos

différentes recettes satisfassent le plus grand nombre d’entre vous.

Chaque année, nous confectionnons de nouvelles recettes pour vous faire connaître de nouvelles

saveurs.

La recherche de l’excellence nous a mené à faire évoluer notre technicité et au fil des années notre

atelier s’est transformé grâce à de nouvelles technologies.

LA CUISSON : la plupart de nos recettes sont le fruit d’un secret mélange de miels, de sucre et de

sirop de glucose. Lorsque ce premier mélange est cuit, il faut incorporer des blancs d’œufs montés

en neige qui nous permettront de donner du volume à notre pâte. Une fois homogène, nous y

incorporons au dernier moment les fruits choisis et la vanille.

LES FRUITS : la recette du fameux Nougat de Montélimar nécessite au minimum 30% d’amandes

blanchies torréfiées. Pour confectionner nos différentes recettes, nous utilisons également des

noisettes, des fruits exotiques, des noix, des myrtilles…

LE MOULAGE : une fois cuit, notre nougat est étalé et égalisé selon la forme définitive qu’il aura. Après

avoir refroidi, il sera découpé au format adéquat : barres, dominos, bâtonnets…

LE CONDITIONNEMENT : la mise en boîte ou la confection de sachets nous permet de mettre la

touche finale à notre œuvre et le choix de nos emballages a été fait en ce sens. Sachets en kraft,

nœuds en raphia, coffrets cadeaux, boîtes métalliques personnalisées, tout est fait pour que la

dégustation de nos produits soit une fête.

La tradition de notre maison est avant tout de vous faire découvrir et apprécier les multiples saveurs du nougat.

The family-run company “Les Trois Abeilles” is a shining example of the masters of nougat making.

From generation to generation, the traditional handmade craft has become renowned as a mark of

richness and quality. Today, in keeping with this great tradition, we continue to use the original recipe

and cooking methods, blending to perfection the best almonds and Provencal lavender honey, all

engorged by the sun. We create new sensations by marrying the famous white mixture with chocolate,

cocoa powder, walnut....

The sweet delicacy can be traced back to the Middle Ages when it was called nogat before adopting

the name “nougat”. Originally, nogat was a cake made with honey and walnuts.Then in the 17th

century, Provence gave it its’ modern identity. At that time, following the example of Olivier de Serres,

a famous French agronomist, many people in Provence planted almond trees on the dry hillsides.

The local cake makers began replacing the walnuts and some of the honey ingredients with almonds

and sugar. And then, by adding egg white, they made the mixture lighter and whiter.

While our nougat has already gone round the world several times, the men and women in our

workshops, craftsmen of this perfect mix of taste and originality, continue to perpetrate this ancestral

tradition of the “Nougat de Montélimar”.

Enamoured by good things, we select the highest quality ingredients which are used in our different

recipes to satisfy as many customers as possible.

Every year we create new recipes to introduce you to new flavours.

Our aim for excellence has led us to develop our techniques and over the years, our workshop has

been transformed by new technology.

THE COOkING: Most of our recipes are made from a secret mixture of honey, sugar and glucose

syrup. After the mixture has been cooked, whipped egg whites are blended in to give it volume. Once

a consistent mixture is obtained selected fruit and vanilla are added at the last moment.

THE FRUIT: The famous “Nougat de Montélimar” recipe is made up of 30% roasted blanched almonds.

To produce our different recipes, we also use hazelnuts, exotic fruit, walnuts, blueberries....

THE MOULDING: When cooked, our nougat is poured out according to the final required thickness.

Once cooled, it is cut into various shapes: bars, dominos, sticks....

THE PACkAGING: The final touch is the choice of packaging in boxes or bags; craft paper bags, raffia

ribbons, present boxes, personalised metal boxes. All this contributes to making the taste of our

products a memorable moment.
