La pomme de terre apparait il ya environ 10 000 ans dans les Andes péruviennes et colombiennes ainsi qu’au chili. Elle traverse l’atlantique vers l’Europe autour des années 1570 où elle est cultivée essentiel-lement par curiosité et pour la beauté de sa plante. Ce sont les guerres et les famines qui ont amenés les personnes à consommer cet aliment qui avait l’avan-tage de pouvoir se conserver dans le sol à l’abri du pillage et des incendies. Aujourd’hui la pomme de terre est après le blé, le riz et le mais, la culture la plus importante sur la planète.

Légume ou Féculent? La pomme de terre est classée dans le guide alimentaire Cana-dien comme étant un légume et non pas un féculent. En effet, bien qu’ayant une quantité importante d’amidon la pomme de terre lorsque elle est consommée avec la pelure (qui est un vé-ritable concentré de nutriments), est riche entre autres en vita-mine B6, vitamine C, potassium, folâtres et antioxydants. Elle déborde aussi d’une foule d’autres éléments nutritifs impor-tants . Elle a donc sa place dans un régime alimentaire varié et équilibré.
Saviez-vous que… … La pomme de terre est le légume le plus consommé en Amé-rique du nord mais trop souvent sous forme de frites ...Pour réussir sa purée commencer la cuisson de pommes de terre à l’eau froide ….une pomme de terre de taille moyenne cuite au four avec chair contient plus de fer qu’une tasse d’épinard et 2 fois plus de potassium qu’une banane
Ingrédients (pour 6 portions) 6 pommes de terres, pelées et coupées
en cubes
4 ou plus carottes, pelées et coupées en rondelles
2 oignons, émincés
2 tomates coupées en dés
1 tasse de bouillon ou d’eau
1 C à soupe. de farine
2 C à soupe d’huile
Sel, poivre, thym , laurier au goût
Préparation Préchauffez le four à 400 °F.
Dans un bol, mélangez les pommes de terres, l’huile, et les assaisonnements.
Déposer sur une tôle à biscuits huilée , étalez de façon à ce que les pommes de terre ne se chevauche pas et mettre au four.
Cuire 35 minutes et retourner chaque quartier et remettre au four 10 à 15 min.
RECETTE EXPRESS
Épluchez les pommes de terre, lavez-les, séchez-les et coupez-les en 4 ou plus selon la grosseur.
Épluchez les carottes et coupez-les en rondelles.
Dans un chaudron, faites chauffer de l'huile , ajoutez les oignons ,faites revenir et dorer un peu, ajoutez les carottes et les tomates, le bouillon, salez, poivrez et laissez mijoter à feu doux en mettant le couvercle .
Au bout de 15 min, ajoutez les pommes de terre, remuez le tout, ajoutez la farine, remuez, couvrez et laissez mijoter en contrôlant que cela ne s'attache pas au fond , regardez de temps en temps la cuisson avec la pointe du cou-teau. ( si nécessaire rajouter un peu d’eau ou de bouillon).
Déguster tel quel ou en accompagnement avec du bœuf , du poulet ou du poisson.

6 pommes de terres, lavées, brossée et cou-pées en quartier
2 C à soupe d’huile
Assaisonnements au choix (paprika, poudre d’ail, poudre d’oignon)

Conservation : Dans un endroit sombre, sec et frais. Éviter de
la mettre au réfrigérateur car les températures froides trans-
formeront l’amidon en sucre. Cuite elle se conserve une semai-
ne au réfrigérateur
Préparation : Pelée ou sectionnée, elle noircit au contact de
l’air. Pour y remédier, la cuire immédiatement ou la mettre
dans l’eau froide légèrement salée. Éviter le trempage prolon-
gé qui lui fera perdre ses éléments nutritifs.

The potato appeared in approximately 10 000 years
ago in the Peruvian and Colombian Andes as well as
in Chile. It crosses the Atlantic Ocean toward Europe
around the year 1570 and it was cultivated essentially
out of curiosity and for the beauty of its plant. Wars
and famines brought the persons to eat potato, which
has the advantage to be able to preserve in the ground

Potatoes & carrots stew
Ingredients (6 servings)
- 6 potatoes, peeled and cut in cubes
- 4 or more carrots, peeled and cut in slices
-·2 onions, cut in slices
-·2 tomatoes cut in dice
-·1 cup of broth or water
-·1 table spoon of flour
- 2 table spoon of oil
- Salt, pepper, thyme, laurel to the taste
• Peel potatoes, wash them, dry them and cut them in 4 parts or more according to
the thickness.
• Peel carrots and cut them in slices.
• In a cauldron, warm oil, add onions, make return and brown a little, add carrots
and tomatoes, broth, salt, pepper and let plot over a low heat by putting the lid.
• After 15 mins, add potatoes, stir the whole, add the flour, stir, cover and let stew
by checking that it does not sticking at the bottom, look sometimes at the cooking
with the point of the knife. (If it’s necessary add a little water or broth).
Have a rough time as it stands or in accompaniment with beef, chicken or fish.

- 6 potatoes, washed, brushed and cut in parts
- 2 table spoon of oil.
- Seasonings in the choice (paprika, powder of garlic, pow-
der of onion).
Preparation :
• Preheat the oven in 400 °F.
•·In a bowl, mix potatoes, oil, and seasonings.
•·Put the all on a sheet steel with biscuits oiled, spread so
that potatoes does not overlap and to put in the oven.
•·Cook 35 minutes and turn every district and put back to
the oven 10 - 15 min.
